Easy Trader Joe’s: Spicy Peanut Salad or Side Dish!

This is a fun little side or salad that is super easy to throw together. It also has the added advantage of saving well in the fridge because of all the “hearty” ingredients. Great for meal prep, too!

INGREDIENTS:

  • Trek Mix (Almonds, Cranberries, & Cashews)
  • Healthy Chopped Veggie Mix
  • 3-4 tbsp. Spicy Peanut Vinaigrette

Mix all ingredients together and enjoy! Obviously, you want people with a peanut allergy to steer clear. Also, “spicy” is an exaggeration. The dressing has a slight kick, but I don’t think most people would consider it truly “spicy.” You’ll want to lightly coat the entire veggie-nut mix with the dressing. I recommend starting with 3-4 tbsp. and adding more if you feel like it needs it!

I’ve served this as a side at barbeques and people seem to really like it because it’s different, fresh, and super crunchy. So many of the traditional barbeque sides lack crunch (potato salad, baked beans, etc.) This crunchy, flavorful number is designed to shake things up no matter the main course!
