EGG CUPS! Easy, 3-Ingredient, Toddler-Approved Recipe!

Ingredients:

  • 2 RIPE BANANAS
  • 4 EGGS
  • HANDFUL OF BLUEBERRIES

Instructions:

  1. Preheat oven to 350 F.
  2. Mash two ripe bananas in a bowl.
  3. Add four eggs and combine thoroughly.
  4. Spray a muffin tin with non-stick spray.
  5. Add 5-7 blueberries per muffin cup.
  6. Pour banana & egg mixture on top of blueberries, filling ¾ of each cup.
  7. Bake for 14 minutes at 350 F.
  8. Let cool and enjoy!

This recipe calls for two eggs per banana, so feel free to make as much or as little as you’d like for each batch!

Spray non-stick spray in each muffin tin hole. Add 5-7 blueberries per muffin cup. Pour banana & egg mixture on top of blueberries, filling ¾ of each cup.

The recipe makes about nine Egg Cups.

By the way, Egg Cups save nicely. Pop leftovers in the fridge and heat in the microwave in 20 second intervals until heated through. Feel free to experiment with other fruits, too! Strawberries or raspberries are amazing additions as well!
